Ketchup/catsup/ is a $800 Million in the US. This is a fun podcast that talks about how fish sauce, Victorian-era preservatives, and fresh tomatoes miscegnated to give us modern ketchup/catsup/whatever. However I do think there must be a role for Roman garum, via Worchestershire sauce.
