Neither Tex nor Mex?

A fascinating article describing how local availability shapes cuisine. In this case it is the cuisine described as Tex-Mex which, in my ignorance, I thought was a fusion cuisine developed over the last couple of hundred years. Instead, these flavors, techniques and dishes were developed by the indigenous populations of the area. In actuality, the basis is Native American.
